Ingredients
1
1/2 pound (700 grams) onions,
thinly sliced
Extra-virgin olive oil for sautéing

3/4 pound (800 grams) beef,
cut into chunks
1
teaspoon sweet paprika
1
tablespoon spicy paprika
3
tablespoon tomato paste
Rosemary leaves to taste
Marjoram leaves to taste
Thyme leaves to taste
Salt to taste
Instructions
In a large pot, sauté the onions in a small amount of oil over low heat until golden.
When the onion is golden, add the beef and brown, turning occasionally to cook on all sides
Dissolve both types of paprika in 1 cup water and add that to the pot
Dissolve the tomato paste in 1 to 2 tablespoons warm water and add that as well.
Add the rosemary, marjoram, and thyme.
Season with salt and cook, covered, over low heat until the beef is very tender, about 1 1/2 hours.
Serve warm.
