Ingredients
2
slices sandwich bread,
crusts removed
1
slice mozzarella
8
small pieces of one or more of the following: anchovy, sun-dried tomato, prosciutto, cooked bacon.
Vegetable oil for deep-frying
Lightly beaten eggs for dredging
Breadcrumbs for dredging
Instructions
Place one slice of bread on the work surface.
Place the mozzarella slice on top.
Trim the mozzarella to fit if it overhangs the bread.
Place the second slice of bread on top.
Cut the sandwich into 4 squares, and then cut each square diagonally into 2 triangles.
Open each little triangular sandwich and add a piece of anchovy, sun-dried tomato, prosciutto or cooked bacon.
Replace the bread
In a pan heat a generous amount of oil for deep-frying.
Dredge each little sandwich first in the beaten eggs. then in the breadcrumbs.
Squeeze firmly and pinch the eggs to seal.
Fry just until golden. If any mozzarella looks ready to leak out, remove the sandwich from the oil immediately serve hot.
