Instructions
- preheat the boiler. If your boiler has a temperature settings, set it to 350°F to 400°F ( 180°C to 200°C).
- Line a jelly-roll pan with parchment paper.
- Mince the parsley and garlic and mix with the breadcrumbs and pecorino.
- Salt and knead by hand until well combined
- Press this mixture against both sides of the cutlets and transfer the cutlets to the prepared pan.
- Broil, turning once if necessary and keeping a close eye on the cutlets to guard against the breadcrumbs burning, until the meat is cooked through, about 5 minutes per sides (but it will depend on how hot your broiler is and how far from the flame your pan sits).
