Palermo-Style Cutlets
  1. preheat the boiler. If your boiler has a temperature settings, set it to 350°F to 400°F ( 180°C to 200°C).
  2. Line a jelly-roll pan with parchment paper.
  3. Mince the parsley and garlic and mix with the breadcrumbs and pecorino.
  4. Salt and knead by hand until well combined
  5. Press this mixture against both sides of the cutlets and transfer the cutlets to the prepared pan.
  6. Broil, turning once if necessary and keeping a close eye on the cutlets to guard against the breadcrumbs burning, until the meat is cooked through, about 5 minutes per sides (but it will depend on how hot your broiler is and how far from the flame your pan sits).
