Instructions
- Place one slice of bread on the work surface.
- Place the mozzarella slice on top.
- Trim the mozzarella to fit if it overhangs the bread.
- Place the second slice of bread on top.
- Cut the sandwich into 4 squares, and then cut each square diagonally into 2 triangles.
- Open each little triangular sandwich and add a piece of anchovy, sun-dried tomato, prosciutto or cooked bacon.
- Replace the bread
- In a pan heat a generous amount of oil for deep-frying.
- Dredge each little sandwich first in the beaten eggs. then in the breadcrumbs.
- Squeeze firmly and pinch the eggs to seal.
- Fry just until golden. If any mozzarella looks ready to leak out, remove the sandwich from the oil immediately serve hot.
