Baked Cherry Tomatoes
  1. Preheat a convection oven to 350° F (180° C).
  2. Line a jelly-roll pan with parchment paper.
  3. Arrange the tomatoes on the pan and season lightly with salt.
  4. In bowl mix the Parmesan, breadcrumbs, rosemary and thyme.
  5. Sprinkle the breadcrumb mixture over the tomatoes.
  6. Season with pepper and drizzle with a generous amount of oil.
  7. Bake until soft and charred in spots 10 to 15 minutes.
  8. Serve immediately.
