Chicken Meatball Skewers
  1. Cut the chicken into cubes, then place it in a food processor fitted with the metal blade, along with the onion, olives, pecorino, and salt and pepper. Process until finely ground. Add the egg and process again to combine. With wet hands (to keep the mixture from sticking) form the chicken mixture into small meatballs, about twelve in all.
  2. Cook the meatballs in a steamer until the chicken is fully cooked, about 15 minutes. Drop the cooked meatballs into ice water for a few seconds to cool them.
  3. Meanwhile, chop the pistachios. Stir the spreadable cheese with a spoon to soften it.
  4. Drain the cooked meatballs and roll them first in the cheese and then in the pistachios. Thread wooden skewers with 3 meatballs a piece and serve.
